My eggplant parmesan…. and then what is left of it! hehe. It was my first time making it today. I didn’t even follow a recipe. Just whisked random things together. And it turns out sooooooo yummy! And less than 200 calories!! Will definitely be making it more often. :3

Dinner:Mashed potatoes, homemade beef patties, horseradish with beets, cucumber and green pepper. Yum!
I normally have a larger portion of carbs (1/2c-1c), but I’m trying to cut down a little while I’m getting back on track. I need as much protein as I can get. :)) But seriously, potatoes are so good for you. I don’t know why they have such a bad rep!

Breakfast: 2 eggs, egg whites, onion, orange pepper, cucumber, cilantro, salsa, butter.
It looks too pretty to eat. :3

I’m not logging my food anymore so that’s a guesstimate. But yeah, haven’t posted a food pic in a while. I wish I had the time! But I usually have to rush to eat whatever I cook and then rush off to wherever I need to go. This is delicious btw. :3

This is my first time cooking sweet potato. I’ve tried it before but never liked it. Decided to roast it with some garlic, oil, and seasoning. It came out pretty good despite my expectations! And apparently it’s really healthy for you. Just wish they were a tad less-sweet. I’ve never been a sweet tooth person.
